Directions:
Preheat oven to 400ยบ chop sweet potatoes and toss with oil and Salt and pepper, place in casserole dish add 1/4 cup of water cover and bake 15 minutes. Chop remaining vegetables toss in oil S&P and place on top of sweet potatoes add 1/4 of water cover and bake 15 minutes. Chop fish into cubes and peel shrimp, add 1 tbsp of lemon juice Salt and Pepper add on top of Veggies add 1/2 cup of water, cover bake 10 minutes or until shrimp and fish is cooked. This recipe is great if you eat it from a bowl with a spoon so you get the broth, otherwise it is quite bland. Feel free to use seasoning blends with the Salt and Pepper or VEggie broth instead of water for extra flavour, switch up the veggies or the seafood have fun and enjoy.
