Directions:  
Cook quinoa in 1 cup water for 15 min.
Heat oil in large dutch oven. Add onion, carrot, celery and peppers and cook for 5 min.
Add spices and cook for 1 min stirring.
Add tomatoes, beans and quinoa and simmer for 15-30 min. Enjoy.
